These Crab and Quinoa Salad Stuffed Avocados are a wonderful way to eat healthy without losing that satisfaction. This filling and flavorful meal is packed with nutritious ingredients! Makes a great lunch, dinner or snack.
I’m a huge fan of avocados, quinoa AND crab. So I could happily eat these stuffed avocados everyday!
The crab and quinoa salad has a blend of tart lime juice and sour cream. It is the perfect compliment to buttery avocados.
I think the trick to eating {mostly} healthy is to find nutritious foods that you actually enjoy eating. Don’t torture yourself by eating only celery sticks. That is not a lifestyle. You can’t live the rest of your life crunching on celery sticks!
You can have that balance of fresh, flavorful, satisfying and healthy. It is about finding those nutritious foods that you WANT to eat not that you HAVE to eat.
I’m sort of on a tangent here. I just loathe fad diets that have people eating only a few foods. Or the worst, the diets that don’t allow you to eat fruits. What?!?
It’s no way to live. Especially when there are so many delicious and healthy foods out there to choose from, like these Crab and Quinoa Salad Stuffed Avocados!

- 1/2 Cup Crab Meat (lump or claw)
- 1 Tablespoon Fresh Lime Juice
- Zest of 1 Lime
- 1/8 teaspoon Sea Salt
- 1/4 Cup Chopped Orange Bell Pepper
- 1/2 Cup Cooked White Quinoa (cook according to package instruction then refrigerate until cold)
- 2 Tablespoons Sour Cream (or Plain Greek Yogurt as a substitute)
- 2 Avocados
- Slice avocados in half lengthwise and remove seed. Carefully peel off skin.
- Mix all other ingredients together and serve crab & quinoa salad over prepared avocados.
